I must say, growing up, my entire Jersey Italian family has always called it gravy….and thats what I call it. The reason I’ve learned we call it that is because our family actually makes “gravy”….tomatoes, dark, simmers for hours with meat, whether it be meatballs, sausage, pork chops and that is the cooking of a gravy.
Yeah, I consider “the sauce” just one part of the whole product, which is the Sunday gravy. Now, the Sunday gravy is also just one part of the entire sacred “Sunday Italian meal”.
